Installing resting bar.

You're right, you probably don't want to notch an original Bakelite resting bar as it's too likely to break on installation. I'd drive out the original pin and install a new part or replica. Bergflak used to carry these.  His pages appear to be down right now. Search Bergflak MP-40 parts. The pin is on the same page as resting bars.

Ive heard it possible to straighten and reflair the pins to get it out and back in but you need special "tools". I would really want to use the pin thats already in it again.
